A new law has been implemented for California restaurant workers where it’s required to wear gloves when handling the food.
It may seem like a good way to avoid viruses being spread to the consumers, but it has made the actual workers angry with the change.
Both bartenders and cooks for sushi restaurants are not pleased because it affects their methods.
In a recent LA TIMES article, sushi chef Toshiaki Toyoshima spoke about the situation:
But the normally stoic Toyoshima can’t hide his frustration. Having to wear gloves, he says, is the worst thing that has happened to him in 48 years as a sushi chef.
“I don’t feel connected to my food,” says Toyoshima, known to diners as “Toyo-san.” “It’s like I’m not making sushi with my own hand.
The change was implemented on Jan. 1st, and as of now has had impact in food quality.(Source: LA TIMES)
